Ingredients
- Wholemeal flour 200g
- Flour 0 200g
- Water 250 ml
- Dried sourdough 30 g
- Turmeric 1 tablespoon
- Beet 1
- Avocado 1
- Tomato 2
- Watercress (or fresh salad) 30 g
- Extra virgin olive oil
- Salt
- Pepper
Steps
1. Briefly blend the beetroot to obtain the juice which you will pass through a sieve to extract it, leaving the bowl aside
2. Place half of the flours, baking powder and salt in a bowl

4. Start kneading with the help of a wooden spoon
5. Add the remaining flours, yeast and water to the bowl with the beetroot juice
6. Seal with cling film and leave to rise in the oven using the Rising Function

7. Once leavened, transfer the dough into 2 box moulds
8. Set the ventilated cooking function with steam and the temperature at 190°C
9. Bake the molds with the loaves

10. In the meantime, slice the tomatoes and avocado, season with oil, salt and pepper and set aside
11. Once ready, take the bread out of the oven and let it cool
12. Cut the loaves into finger-thick slices

13. Stuff with avocado, tomato and lettuce, alternating loaves of different colors
14. Cut into wedges and serve accompanied by crushed avocado if desired
