Ingredients
- Courgettes 4
- Spring onion 1
- Cherry tomatoes 8
- Cucumber 1
- Fennel bulb 1
- Radishes 4
- Mixed spices, to taste -
- Pre-cooked couscous 300 g
- Vegetable stock 500 ml
- Lemon 1
- Fresh mint -
- Extra virgin olive 4 teaspoons
- Salt a pinch
Steps
1. Bring the vegetable stock to the boil using the microwave function for 5 minutes. Empty the pre cooked couscous into a large bowl then carefully pour the vegetable stock over the couscous to rehydrate it. Continue to do this until all of the liquid has been absorbed.
2. Gently whisk the mixture with a fork to break up any clumps that have formed.
3. Wash and dice the vegetables. Mix them with the couscous.
4. Season the mixture with the extra virgin olive oil, chopped mint, lemon juice, spices to taste and salt. Serve.
